Syrian cheese pasta

This melty, cheesy delicious pasta feels refreshing because of the parsley yet warm and cozy because of the pasta. So delicious and even better paired with fresh tomato.

  • 2 10 oz queso fresco
  • 2 cups shredded mozeralla
  • 1/2 cup fresh parsley chopped
  • 1/4 cup caraway seeds
  • 1/4 tsp salt
  • 1 Tbls oil


  1. Boil pasta according to package instructions
  2. Reserve 1/2 cup of the pasta water
  3. Mix the two cheeses, caraway seeds, and salt in a bowl
  4. Add the oil, cooked pasta, cheese mixture, 1/4 cup of the reserved pasta water at a time on low heat and cover.
  5. Allow the cheese to melt, stirring often to make sure the cheese is evenly distributed.
  6. Toss with fresh parsley
  7. Enjoy with fresh tomato and a sprinkle of salt.
