These crunchy sweet moist delicous addictive bites are a combination of everything perfect.
Preheat oven to 350
Coat mini cupcake pan with nonstick spray
Cream 2 sticks of softened butter and 2/3 cup brown sugar
Add flour and salt and continue to mix
Press 1 Tbsp of dough into each well and with your fingers make a hole and shape into pie cups
Prebake the cups for 9-10 minutes or until golden around the edges
Toast pecans for 10 -12 minutes or until fragrant. Coarsely chop and set aside.
Mix both sugars, eggs, syrup, butter, vanilla, salt and toasted pecans
Add roughly 1 Tbsp into each cup
Bake for 15 minutes
Sprinkle each cup with sea salt
The most time consuming part of these yummy pecan bites is making the cups. The dough is pretty grainy and it can get messy. An easier alternative is to make them into pecan bars which are just as yummy. Halve the dough recipe and prebake for 10 minutes in a 9 in square pan before spreading the filling on top and bake the entire pan for 15-20 minutes
