  • 1 cup bulgar #1
  • 1 1/4 cups water
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 tablespoon dry mint
  • 3 tablespoons pomegranate molasses
  • 1 tablespoon lemon juice
  • 2 tablespoons red onion or white onion diced real small
  • 1 1/2 cup finely chopped fresh parsley
  • 1 cup diced fresh tomato
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

  1. Soak bulgar #1 for roughly 20 minus (do not oversoak because then the bulgar becomes too mushy)

  2. After you soak and drain the bulgar add tomato paste, cumin, dry mint (substitute with fresh mint if dry mint is not handy), salt & pepper to taste, pomegranate molasses, lemon juice, and onions

  3. * optional If you want it more on the spicy side add 1/2 teaspoon of cayenne or crushed red pepper

  4. Knead it all together for roughly 5 minutes so flavors get real emulsified

  5. Add chopped fresh parsley and diced tomato

  6. Adjust flavor to taste (pomegranate molasses or lemon etc)

  7. add olive oil at the very end
