One Pot Moroccan Lemon Chicken

Always wanted to make a tagine Moroccan dish, but don't own a tagine?  This is your answer!  A ONE POT Moroccan Lemon chicken dish!  With ingredients like dates, celery and ginger, its going to be a party in your mouth!

Ingredients

  • 5 chicken thigh skin on bone in you can use chicken breast bone in
  • 1 cup diced brown onion
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup diced tomato
  • Juice of 1 lemon roughly 2 Tablespoons
  • 1 tsp diced fresh ginger
  • 4 crushed garlic
  • 1/2 tablespoon ground cumin
  • 2 teaspoon cinnamon
  • 5 medjool dates pitted and sliced
  • 1/2 cup olives put as many as you would like
  • 2 cups chicken or vegetable stock
  • 3 tablespoons olive oil
  • 1/2 cup cilantro
  • 1/2 cup chickpeas canned, drained

Instructions

  1. season chicken with salt and pepper
  2. Sautee onions, ginger and garlic in 2 Tablspoon olive oil for 3-4 minutes until fragrant but not brown
  3. Add carrots, celery, tomato, cumin & cinnamon
  4. Stir for a few minutes
  5. Remove vegetables to separate plate
  6. Add remaining olive oil
  7. Brown chicken on each side for 3-5 minutes
  8. Add chickpeas, stock, lemon juice, olives, and salt & pepper
  9. Stir
  10. Cover for 10-15 minutes

  11. Add cilantro and dates

  12. cover for a few more minutes

  13. Make sure chicken is fully cooked

  14. Serve with couscous or rice
