Pearl barley soup is a hearty warm cozy soup that is also full of nutrition. I felt so accomplished as a parent when all three kids finished their plate AND asked for more.

- 2-3 chicken thighs bone in
- 1/2 onion quartered
- 2 bay leaves
- 3 cardamom pods
- 2 whole cloves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Additional salt and pepper for chicken
- INGREDIENTS
- 8 cups chicken broth
- 3 tablespoons oil
- 1 onion diced
- 1 shallot diced
- 1 cup uncooked pearl barley
- 2 teaspoons turmeric
- 2 lime juiced
- 3 tablespoon tomato paste
- 2-4 carrots diced (roughly 1 cup)
- 1 bunch parsley chopped
- Additional lime for garnish
- Salt and pepper the chicken
- Sauté chicken until lightly golden brown
- Add at least 8 -10 cups of water as well as additional ingredients
- Bring to a boil, remove any excess froth
- Lower heat and cover for 35 -40 minutes
- Saute onions and shallots in oil until translucent in a large pot
- Add barley and stir for 1 minute
- Add broth, turmeric, lime juice, tomato paste, salt and pepper
- Bring it all to a boil, lower heat and simmer for 1 hour
- Stir in the carrots and simmer for an additional 30 minutes
- Stir in fresh parsley
- Serve with lime wedges
