Pomegranate Honey Dressing is a super simple 4 ingredient dressing that I literally make every single night, sometimes twice a day for lunch and dinner. You would think I would just make large quantities of it in the beginning of the week, but I don’t. It’s that easy that I don’t even mind the trouble.

Out of all the greens, kale is my favorite because of its crunchy texture, tough leaf feeling, and amazing health benefits. It is among the most nutrient dense foods on the planet. I feel like I’m truly doing my body right by eating kale. Also, it doesn’t get soggy quickly, in fact you can leave it in the fridge and it will still taste good the next day.
My mother in law shared this recipe with me after trying to replicate a favorite dressing of ours from a mom and pop restaurant that she does not live close to. She remembered the flavors of this dressing and kept trying different ingredients until she got it right.
The key is pepper for that extra kick. The combination of sweet, tangy and that extra kick make this salad dressing extra special.
You’ll be surprised to find that one of the four ingredients is yellow mustard. Note: Not dijon mustard, yellow mustard. It has a different kick to it and it taste delicious combined with the rest of the ingredients. For the actual salad, I tend to like some sweetness with my greens, and I always lean on medjool dates for that. Using herbs are always a good idea. Basil, fresh mint, and fresh dill are staples in my home. I combine them with kale and the salad is instantly elevated to another level.
Items to include to build your perfect salad
- Leafy green (kale, arugula, spinach and/or a combination of them)
- Fresh herbs (fresh dill, fresh mint, fresh basil)
- crunchy fruit (crispy apple, pear, or persimmon – do not feel limited to just these, they are just examples)
- sweet extras (medjool dates, black mulberries, raisins, currants)

A very simple yet extremely delicious 4 ingredient salad dressing that is a staple in our home.
- 1 Tbsp olive oil
- 2 Tbsp pomegranate molasses
- 1 Tbsp yellow mustard
- 1 Tbsp honey
- 1/2 tsp black pepper
- 1/4 tsp salt
Mix all ingredients together
Feel free to adjust to your liking
- If you feel like it needs more tang, add more pomegranate molasses
- If you feel like it needs more sweetness, add more honey
- If you think it needs more of a kick, add more pepper and mustard
