Fresh Corn Salad has been a great go-to for us this summer! It’s been a hit a barbecues and dinners! Our beloved Adam, Nadia’s little brother, made this dish for us and it was so good, we asked him if we could share it… I mean, what a nice guy;-) Best of all, you don’t have to cook the corn! It’s not that it’s difficult to cook corn on the cob, but getting out the enormous stock pot and waiting for them to soften feels like such a chore!
But, you have to listen to me and follow this one thing!
You MUST USE FRESH CORN! I can’t express that enough. I tried to take a shortcut and use frozen corn and it sucked! Totally different recipe experience, so pleeeease trust me and do not think it won’t make a big difference!
Moving along into all the things that make it awesome…
This salad is really light and fresh! It’s got radish, jalapeno, onions, cilantro… or if you’re like me, parsley (yuck cilantro! Yuck!)…then for the dressing, which is simple. It’s sweet, tangy and spicy! And if that isn’t a good combination, I don’t know what is. Either way, this is such a wonderful salad/side dish. You gotta try it!

- 8-10 ears fresh corn on the cob (about 24-30 ounces)
- 1/4 cup lime juice (1/3 c if you like it very tangy)
- 2 tablespoons olive oil
- 2 tablespoons honey (add an extra if you add more lime)
- 1/2 teaspoon salt
- 1 small jalapeno
- 1/2 bunch cilantro, stems removed (or parsley)
- 1 tablespoon cumin, ground
- 1 small red onion, thinly sliced
- 1 cup radishes, thinly sliced, optional
Shuck the corn and cut off the kernels into a large bowl. Set aside.
In a blender, add lime juice, olive oil, honey, salt, jalapeno and cilantro and blend well. Taste to make sure it's the right balance to your taste.
Add the dressing to the corn and stir to combine. Sprinkle cumin and stir again.
Add sliced onions and sliced radishes and stir to combine and serve.
1 small jalapeno is actually very spicy. So if you prefer a little less heat, use half. Taste the dressing after you blend it up to make sure to add more honey, lime or salt as you like.
