Beets are more than just bright and beautiful veggies…
This Beet Salad is really something. You know why….because it’s made with almost nothing! I really love beets. I eat them all the time. They contain valuable nutrients that may help lower your blood pressure, fight cancer and inflammation, boost your stamina, and support detoxification! So, that’s why this salad is awesome- it’s all beets!
Who needs goat cheese and arugula anyway!?
Plus, I don’t want to overshadow the dressing. Because even though it’s so simple, being made of yogurt, honey and a touch of salt, it compliments the beets perfectly. It’s light, it’s refreshing and if I do say so myself, quite addictive. Also, it’s nice to get away from the typical beet and goat cheese and beet and arugula salads we’re so used to having!
Bring on the toppings!
I love to take a handful of nuts, especially pistachio (because I think they go best), or any seeds, sesame, pumpkin, sunflower, hemp, and sprinkle them on top. Oh, and if you like the sounds of this salad, you have to try our Carrot Salad with Tahini Honey Dressing!

Beet Salad with Honey Yogurt Dressing only needs about three ingredients and no cook time! Throw on some crushed nuts if you'd like and enjoy the deliciousness!
- 2 medium/large beets, cooked (canned works too)
- 1/4 cup yogurt, plain (preferably full fat)
- 1 tablespoon honey
- 1/8 teaspoon salt
- nuts and seeds (garnish)
Chop beets.
Combine yogurt, honey and salt and stir to combine. Drizzle on top of beets and sprinkle with nuts and seeds if you'd like. Enjoy!
You don't need to add salt to the dressing. I feel it balanced out the honey nicely. But feel free to use less or none at all. Have fun with the nuts and seeds! They make the texture more interesting!
