- 2 pounds chicken breast
- 2 tablespoons lemon pepper
- 1 tablespoon thyme, ground
- 2 teaspoons coriander, ground
- 1/2 teaspoon cumin, ground
- 1 teaspoon salt
- 1/2 cup lemon juice, fresh
- 2 tablespoons olive oil
Cut your chicken breast into small chunks or strips.
In a medium bowl, add chicken pieces and sprinkle spices evenly onto chicken and toss/stir until evenly distributed.
Add lemon juice and soak for at least 10-15 min, while you prepare other meal prep items or other dishes (the longer the better).
In a large skillet, over medium-high heat, add olive oil and spiced chicken with liquid. Cook for about 3-5 min on each side until chicken begins to turn golden.
You can also marinate the chicken in a ziplock bag if you find that more convenient space wise. Feel free to add or substitute spices and herbs.
