The Instant Pot has been my new favorite kitchen gadget. I’ve been trying to use it for everything I want to make lately and it really is great for almost anything. The drawback is it requires a manual with A LOT more detail than the one that comes with the pot. So, I find that to be really frustrating. You really have to figure out cooking times and modes, and it really is a lot of trial and error. But don’t worry! I’ll do it for you!
The Carrot Lentil Soup has some great things like carrots and lentils of course, but also has chickpeas, garlic, onions, bone broth, pomegranate molasses, and parsley if you want.
So what are the steps?
1.Place all ingredients in the pot and stir them together
2. Put the lid on and turn it until it makes the “closed” sound effect
3. Turn the knob to the “sealed” (as opposed to venting) position.
4. Select SOUP| BROTH Mode on the pot.
5. Set time to 5 min.
Is that seriously it??
Yep! In 5 minutes your hearty veggie lentil soup will be all finished and you can save the rest to eat for the next few days! This recipe of course can be modified with any veggies or different lentils and will still be great!

Instant Pot Carrot Lentil Soup takes a handful of healthy, easy ingredients and cooks in 5 minutes!
- 10 cups beef broth (or any broth you like)
- 1/4 + 2 cup + tablespoons pomegranate molasses
- 2 cups carrot, sliced in rounds
- 2 cups chickpeas
- 1 cup yellow lentils, dried
- 1 cup onion, chopped
- 8 cloves garlic, pressed
- 1 teaspoon salt
- 1/2 cup parsley, chopped (optional)
In the bowl of the Instant Pot, add all the ingredients and stir together.
Place lid securely on pot until you here the "closed" sound effect. Turn the black knob to "sealed."
Press the SOUP | BROTH mode on the pot and using the plus and minus buttons, set the time for 5 min.
The pot will say "On" and make a beep. It will begin to pressurize. Once it reaches the optimal pressure, the timer will begin.
After the 5 min is finished, the pot will still have a lot of pressure inside. You can either leave it to release the pressure on its own, which can take about 30 min for the little red button to drop (that's how you'll know it's safe to open). Or if you're in a hurry, you can release the pressure manually using the black knob turned to "venting" position. CAUTION: Make sure you wear an oven mit while releasing the pressure as extremely hot steam blows upwards out of the knob. Once the pressure is released, the little red button will drop down. It is now safe to open the lid!
You can use red or brown lentils or different beans if you'd like! If you love parsley add more. If you prefer cilantro, add that! It's a flexible soup!
