Prep takes less than 10 minutes and then it gets tossed in all together. I added an additional ingredient that I think is essential to really tie it in all together. Once roasted, this ingredient adds depth and flavor to the dish that takes it to another level
What is the this special ingredient?
Garlic. Cut a whole head of garlic in half and drizzle with oil. Roast it along with the tomato and once its all out, remove the skin. Mash it all together and you won’t believe how delicious it tastes.
What kind of pasta should I use? Does it matter?
Technically, you can use whatever pasta you like. However, what I learned from a world renowned pasta maker is each pasta shape is intended for a different type of dish. Saucier dishes need something to “scoop” up the sauce etc. I found that angel hair pasta is perfect for this dish because its thin enough that the pasta doesn’t take away from the sauce flavor but rather aids in facilitating it into your mouth.
Can I use other vegetables?
Sure, You can roast whatever vegetables you like along with the cheese and then toss with pasta of choice.

This delicious pasta dish went viral on the internet for good reason. It takes less than 10 minutes prep time and has depth and flavor that take it to another level.
- 1 lb cherry tomato
- 2 Tbls olive oil
- 2 Tbls balsamic vinegar
- 1 lb angel hair pasta
- .8 lb Bulgarian feta * or cheese of choice
- 1 tsp sumac * option
- 1 tsp dried mint * or herbs of choice
- Generous amount of salt
- 1 whole head of garlic cut in half
- Preheat oven to 350
- In a pyrex add tomatoes
- Add block of cheese in the center
- Cut head of garlic in half and add to pyrex
- Drizzle with oil, balsamic vinegar, salt, sumac, dried mint
- Roast in the oven for 90 minutes
- Boil pasta according to package instructions
- Take out, remove garlic skin
- Mash it all together
- Toss with pasta
- Garnish with basil, enjoy
