Mixed vegetable casserole is an easy and convenient recipe that can be made with any veggies you have on hand. Plus, the tomato meat sauce makes it a more filling, cozy, comfort food you won’t get enough of!
Mixed vegetable casserole sounds kinda lame I know. So, I really dwelled on what to title the recipe, and that was the best I could do. Can you believe that!? But don’t judge a delicious and easy dish off of a title please! It’s so easy to make, it’s healthy, and it’s really yummy, so trust me and try it!
Another thing I have with the dish, not to keep giving it a hard time, but it doesn’t necessarily look so pretty. So, what I decided to do was use brighter, more colorful veggies that would kind of lighten things up. I chose Chinese eggplant, red and orange bell peppers, red potatoes and red onion, and yellow and green zucchini. But again, that’s my own thing. You by no means have to care about how bright it looks because the taste is so good, does it really matter?!
When my mom used to make this dish, we ate it by hand with pita bread. Also, it’s perfect all on its own! Such a flexible dish that you can really make your own. You can also leave out the beef for a meatless Monday or vegetarian option. Whatever you decide, you’ll love it! Enjoy!
The simple, tasty way to get in your veggies and can easily be made without meat for a vegetarian option!
- 3 cups eggplant, chopped
- 2 cups yellow zucchini, chopped
- 2 cups green zucchini, chopped
- 2 cups potato, chopped (any kind)
- 1 cup bell pepper, chopped
- 1 cup onion, chopped (any kind)
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 pound ground beef, 80%
- 1/4 teaspoon baharat/7 spice/ all-spice (optional)
- 15 ounce tomato sauce
- 15 ounced diced tomatoes
Preheat oven to 375 degrees F. Prepare a large glass or metal casserole dish/pan.
Add all the vegetables to the pan. Toss with olive oil and sprinkle with salt and pepper. Add the diced tomatoes. Stir to evenly distribute.
Cover with parchment paper and bake for 30 min and then stir the veggies and bake for another 30 min. At the time the veggies go in the oven, you will prepare meat mixture.
In a medium skillet, over medium-high heat, add ground beef and sprinkle with baharat or all-spice. If you don’t have either, sprinkle with some salt and pepper. Use a wooden spoon to break into small pieces and cook until meat is golden brown.
Lower the heat. Add can of tomato sauce to the skillet with the meat and cook for 3-5 min. Set aside to add to the casserole as it bakes
Carefully remove casserole from the oven and add tomato meat mixture and stir to combine. Place back in the oven for about 10 just to allow flavors to blend.
You can use any combination of vegetable you would like or have on hand. Typically we eat this with pita bread, but it can be eaten with any grain or on its own. Also, you can easily make this vegetarian by omitting the meat!
