Linzer cookies are really special, not just because they’re uniquely delicious, but because they’re so beautiful! I make Linzers for all kinds of occasions, from Valentine’s Day to Christmas! When I make them for holidays outside of Christmas, I usually leave out the spices because somehow certain spices can only work for me during Thanksgiving and Christmas. But, if truth be told, a true Linzer recipe does have lots of yummy spices!
Don’t let the cutouts intimidate you!
So, to make these easily, you’ll want to have special Linzer cookie cutters, like these. They also come in specialty shapes like Christmas, Valentine’s, etc. But, if you don’t have them, no worries! Use a regular small cookie cutter or cup of your choice to cut two cookies out. Then, find another shape that’s only about an inch big and cut out the second cookie and reuse the scrap by adding it back to the rest of the remaining dough.
It’s jam time…
Here’s the best part, each cookie will have two cookies, in order to make one sandwich. One regular cookie, and one cookie with a cut out. After you bake them until just slightly golden and allow them to cool, you will sprinkle all the cutout cookies with a powdered sugar sifter, and then… it’s jam time. You can obviously use any jam you would like, but the traditional, classic flavor is raspberry! And to me, with or without seeds will be great! Take the plain cookie (without the cutout), put a small amount of jam in middle, then top with the powdered sugar cutout cookie! Done!

Linzer Cookies the spiced nutty cookie with a sweet jam filling!
- 3/4 cup salted butter, softened
- 1 cup white sugar
- 2 cups all-purpose flour
- 3/4 cups blanched slivered almonds, ground
- 1 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1 cup raspberry jam (with seeds)
- powdered sugar, sifted for topping
Preheat oven to 350F degrees (180C). Prepare a parchment lined baking sheet.
In a larger bowl, cream butter and sugar together until they are light and fluffy. Beat in egg.
In a medium bowl, whisk together flour, almonds, cinnamon and cloves. Then add flour mix to butter mix and stir until well combined.
Roll out half the dough on a well floured surface. Using a linzer cookie cutter, cut out flat pieces. Then with the remaining dough, cut out the holed pieces, making sure there is an equal number of both.
Bake for 10-12 min or until lightly golden. Cool completely. Sprinkle powdered sugar on holed pieces with a sifter. Add a small amount of jam to the underside of flat pieces and top with holed pieces.
Feel free to add any jam you would like or use seedless jam if you prefer.
