Gingerbread cookies are the adorable, spiced, ginger, sweet cookies that men and women are made off!
Gingerbread cookies are a staple for the holidays. I personally like mine soft and chewy. So the time allotted for this recipe will give you that result. If you like crispy, then try to make sure the cookies are rolled out thinner and bake them a tad bit longer. They’re so fun because you can decorate them in so many different ways. And they have that special brown color from the molasses that allows you to spot them from a mile away!
We used to gather around and decorate together as a family. I would give everyone a small icing bag and tell them to be creative. It was sooo funny to see where everyone would go with it and we would laugh so hard! It’s a really fun activity, you should try it;-)
Remember this dough can get really soft, which will make it a challenge to roll out without it sticking everywhere. So chill the dough in the fridge for about 20 minutes or until it’s firm and then roll it out on a nicely floured surface.

The spiced, ginger, sweet cookies that men and women are made of.
- 3/4 cup salted butter, softened
- 1 cup white sugar
- 1 large egg
- 1 tablespoon water
- 1/4 cup molasses
- 2 1/4 cup all-purpose flour
- 2 teaspoons ginger, ground
- 1 teaspoon baking soda
- 3/4 teaspoon cinnamon, ground
- 1/2 teaspoon cloves, ground
- 1/4 teaspoon salt
Preheat oven to 350F degrees (180C). Prepare a parchment lined baking sheet.
In a larger bowl, cream butter and sugar together until they are light and fluffy. Beat in egg. Then stir in water and molasses.
In a medium bowl, whisk together dry ingredients. Then gradually add flour mix to butter mix and stir until well combined.
Roll out dough on a well floured surface. Cut into gingerbread men & women. Bake 8-10 minutes. Allow to cool before handling.
Dough will be soft. If it becomes too soft and sticky to roll, refrigerate for about 20 minutes or until it firms up.
