Apricot chicken is really easy to make! And as you all know, that’s what we like and appreciate in Sweet Pillar Food world! Since summer is here, we always like to get into the spirit of things, and what better to feature than apricots and peaches!
Don’t worry, it’s not just for summer!
Good news is, I make this recipe with our Simple Summer Peach and Apricot Jam! What makes that great is that you can make that jam with dried fruits when the season is off or if you run out of the fresh fruits because they’re so good you ate them all!!
What I love about this dish is that it still has a savory element from the garlic, onion and dijon. I’m kinda big on the sweet and sour type chicken dishes, so this one was yummy to me and definitely a welcomed chicken change of pace for summer!

Apricot Chicken is a simple dish that's sweet and savory and that sweet apricot flavor is the perfect compliment to a summer dinner!
- 1 pound chicken breast (salt and pepper to season)
- 1 tablespoon olive oil
- 1 cup yellow onion, diced (or one small onion)
- 2 cloves garlic, pressed
- 2 cups chicken broth
- 1 cup simple summer peach jam (see link in post)
- 2 teaspoons dijon mustard
- 1/4 teaspoon salt
Season chicken with salt and pepper.
In a medium/large skillet over medium-high heat, add olive oil and chicken. Cook 2-3 min on each side or until chicken is cooked through and golden in color.
Remove chicken from skillet and add onions without cleaning skillet, using remaining oil and juices. Cook 2-3 min. Add garlic and cook 1 min.
Add broth, jam, dijon and salt. Bring to a simmer for 5-7 min. Add chicken and simmer another 5 min.
Feel free to add some chopped dried apricots or some toasted pecans to the dish or to garnish with some parsley or other greens! If you prefer it less sweet, add more dijon.
