I’ve been making Apple Goat Cheese Pizza for a long time now and I absolutely love it! I learned it from Cooking Light! I had this tradition with my aunt, uncle and cousins, where we would do what we called a “cook-a-thon” every Friday. We would all get together at my aunt’s house and everyone would be in the kitchen together cooking, talking and laughing…it without exaggeration was one of my favorite things on the planet to do.
So, during one cook-a-thon…
I found this recipe for Apple Goat Cheese Pizza. I was like hmm, this sounds interesting, so I would make it my cook-a-thon dish for the week! It was so delicious that not only did everyone really love it, we ended up making it many times again. Plus, what better time to try it than now, when it’s hot and you want something light and airy!
Don’t get me wrong, this isn’t your run of the mill “light” pizza. It’s got so many flavors and textures playing together at the same time, you won’t even miss the original, saucy, melty, cheesy goodness….ok, ok, they don’t compare! You’re not supposed to compare apples to oranges anyway! Back at the ranch…the goat cheese is creamy, the thyme herby, the pecan crunchy, the apples juicy, and the arugula, it’s like one delicious salad tangy salad pulling it all together!

This sweet and savory pizza is light and filled with many delicious flavors and textures that work perfectly together!
- 1 tube Pillsbury thin pizza crust
- 1 large apples, thinly sliced
- 1 cup goat cheese, crumbles
- 2 teaspoons fresh thyme, chopped
- 1 tablespoon olive oil
- 2 teaspoons dijon mustard
- 2 teaspoons lemon juice, fresh
- 1 1/2 teaspoons honey
- 2 cups arugula
- 1/4 cup pecans, chopped, toasted
Preheat oven to 425 according to package instructions. Prepare a baking sheet with parchment paper.
Lay out pizza dough on baking sheet. Add apples to the dough so the entire surface is evenly covered, leaving a little room along the edges to hold.
Sprinkle goat cheese all over evenly. Then sprinkle thyme all over evenly. Bake for 8-12 min according to package.
In a medium sized bowl, mix oil, mustard, lemon, and honey. Add arugula and toss to coat.
When pizza is out of the oven, scatter pecans all over and top with arugula.
I personally recommend using a firmer more tart type of apple. But any apple can work!
