Leek & carrot saute aka Barasia is a light and fresh vegetable medley that’s a one pan wonder and only requires two main ingredients! But from the taste you would never know!
Barasia in Arabic means leeks. It is a popular dish in Syria, and from what I’ve heard many other countries in the Middle East. As with a lot of dishes, this one is really healthy and actually so simple and quick to make you’re definitely going to want to put it into regular veggie rotation.
My mom used to make this dish a lot growing up. And why not!? It’s got leeks, carrots, olive oil, vinegar, and some salt. Of course, if you ask me, lemon juice as well….again, my obsession with lemon juice always shines through. My mom on the other hand kept trying to be like, “well mama, we don’t really put lemon juice too, but go ahead.” So I always do. But feel free to be like my mom and just use vinegar.
The only thing that can be kind of annoying about this dish is cleaning the leeks. They’re such a great food, but dirt really get into those guys! However, I recently discovered at Trader Joe’s a frozen pre-cleaned and pre-sliced bag of leeks!!! Genius I tell you! It’s like they knew we’d all be making Barasia all the time now!
So either grab some fresh ones from the market, or more conveniently, ready to use ones from Trader Joe’s and try this recipe! Trust me you’re going to want to make it a lot! It’s a refreshing break from broccoli, cauliflower and spinach!

Leek & Carrot Saute aka Barasia
Barasia- leek & carrot saute is a light and fresh vegetable medley that's a one pan wonder and only requires two main ingredients! But from the taste you would never know!
- 2 1/2 cups leeks, chopped
- 2 cups carrots, chopped
- 3 tbsp olive oil
- 1/4 cup vinegar, apple cider
- 1 tsp salt
- 1-2 tbsp lemon, fresh (optional)
In a large skillet over medium heat, pour olive oil. Allow to heat for a minute, then add carrots. Cook for about 5 min. Then add leeks and cook another 5 min. Add the vinegar, salt and lemon (is using). Cover and let cook together for another 5-10 min or until veggies are tender.
You can add more or less vinegar if you like. You can also leave it out altogether, but it really makes the dish shine.
