Sweet pea and mint tartine is so light and refreshing it’ll become your summer favorite!
I know peas and mint sound weird at first, but boy do they make a great team!! I had a feeling they’d do well together because in Middle Eastern cooking, we make this yogurt sauce with mint and cucumbers that we add to rice and peas. So here, I kinda followed that path, but made it really have a refreshing, light flavor to it!
As some of you may or may not know, a “tartine” is a french word that basically describes a fancy French open-faced sandwich topped with spreadable ingredients. And VOILA! That’s what we have right here! We got bunches of fresh mint from the market and then used good ol’ convenient frozen peas. As always, we try to keep it simple and manageable so it whips up in minutes by just adding olive oil, lemon juice and some Parmesan! It’s really exciting and incredible to me when things that are this easy to make are so flavorful and yummy to eat!
Then, of course we couldn’t help it….or better yet Nadia couldn’t, because we have been on a major lebneh kick, and we added a dollop of that thick creamy yogurt and WOW! It made it even better! Like legit, SO delicious!
Bottom line, whether you choose to throw on some yogurt or not, you’re going to love this! And why not try it!? It’s super quick and easy to make! Let us know what you think!
Sweet Pea & Mint Tartine
Light, Fresh and flavorful! Makes for the perfect summertime snack!
- 1 16oz bag frozen green peas
- 1/2 cup mint, fresh, roughly chopped 1 cup if you prefer extra minty flavor
- 2 tbsp olive oil
- 2 tbsp parmesan
- 2 tbsp lemon juice, fresh
- salt & pepper to taste
Let frozen peas thaw. Then add olive oil and mint and blend a little bit. Then add all ingredients and blend until a thick chunky mixture forms. You will need to use a spoon to keep pushing down the mixture as it's not very liquid. If it becomes too dry add a tablespoon or two of water.
Feel free to add a dollop of yogurt, ricotta cheese or pickled onions!
