Pomegranate maple sweet potato mash is an amazingly sweet addition to all your savory sides! It’s always good to break things up with a little sweetness!
I love sweet potatoes! I eat them multiple times a week! They’re healthy, packed with a ton of nutrients and they’re super filling. In one medium potato, there is over 400 percent of your daily vitamin A requirement, plus loads of fiber and potassium. They have more grams of natural sugars than regular potatoes but more overall nutrients with fewer calories. So why not invite them in to more and more recipes! Woohoo!
In honor of Thanksgiving season, I decided to use this beloved vegetable, yet again. In my house, my mom would make sweet potatoes all cut up into chunks and then cook them down in this sugar water mixture until they were super soft and ultra sweet. This year, I decided to switch it up. So I added some pomegranate molasses and some maple syrup for sweetness and it gave such a great flavor! Not too much so that you can pinpoint what it is, but just enough to give it a, “hmm, what’s in this?”
Also, it was nice to see them in a mash (why should regular potatoes have all the fun)! They’re so creamy and whipped thanks to butter, because as we all know, butter makes everything better…I mean, EVERYTHING! Then I just topped them with some pomegranate seeds and some toasted pumpkin seeds for a little crunch and bam! A winner!
Pomegranate Maple Sweet Potato Mash
This creamy, sweet potato mash will be a welcomed edition to the regular savory sides, with a hint of pomegranate to add unique flavor!
- 2 large sweet potatoes OR yams
- 1/4 cup butter, unsalted, melted
- 4 tbsp maple syrup, natural
- 1 tbsp pomegranate molasses
- 1/2 tsp salt
- pomegranate & pumpkin seeds (for garnish)
Chop sweet potatoes/yams into chunks. Drop them into a large pot of boiling water and cook for about 20 min or until they are very tender. Drain the potatoes and begin to mash with fork or potato masher. Add in remaining ingredients and stir until fully combined. Transfer to serving dish and top with pomegranate and pumpkin seeds!
Feel free to adjust the amount of maple syrup and pomegranate molasses to suit your taste. Same goes for the salt. Also, feel free to top with pecans or any other nuts or seeds of your choice!
